Ingredients

Scale

1 can (15 oz) chickpeas, drained and rinsed

2 celery stalks, diced

1/4 cup finely chopped red onion

2 tablespoons sweet relish

1/3 cup mayonnaise (or Greek yogurt)

Salt and black pepper to taste

Optional: chopped herbs, boiled eggs, diced apples

Instructions

1. In a large bowl, combine chickpeas, celery, and red onion.

2. Add sweet relish and mayonnaise. Mix until well combined.

3. Season with salt and pepper. Taste and adjust if needed.

Notes

Best served cold. Keeps in fridge up to 4 days.
