Description
Fluffy and protein-packed Greek yogurt pancakes made with simple pantry ingredients. A healthy and delicious start to your morning.
Ingredients
1 cup plain Greek yogurt (2% or full-fat)
2 large eggs
1/2 cup milk or water (if needed)
1 cup all-purpose flour
1 tbsp baking powder
1/4 tsp baking soda
1 tbsp sugar or maple syrup
1/2 tsp salt
Butter or oil for cooking
Instructions
1. In a large bowl, whisk together Greek yogurt and eggs until smooth.
2. If the batter is too thick, add a splash of milk or water.
3. In a separate bowl, mix flour, baking powder, baking soda, sugar, and salt.
4. Add dry ingredients to the wet ingredients and stir gently—do not overmix.
5. Let the batter rest for 5–10 minutes while you preheat the pan.
6. Heat a non-stick skillet over medium heat and add butter or oil.
7. Scoop 1/4 cup of batter onto the skillet for each pancake.
8. Cook until bubbles form on the surface and the edges set, then flip.
9. Cook for another 1–2 minutes until golden brown.
10. Serve warm with your favorite toppings.
Notes
Use full-fat yogurt for richer flavor and texture.
You can add blueberries or mashed bananas for variety.
If you want more protein, add a spoonful of vanilla protein powder to the batter.
